Grill Up Some Love

I recently held a contest on The Eat-Clean Diet website asking for your best Father’s Day grill menu ideas, and you didn’t disappoint with all of your amazing suggestions. Below I have included two creative menu ideas to inspire you PLUS my recipe suggestions. 

Grilling up a clean & delicious meal is a great way to do something nice for the dads in your life this Sunday. What are your plans?



Appetizer
Cambodian-Italian Fusion Scallops
Scallops seared in homemade fish broth with saffron, bay leaves, basil and garlic. Presented in shells with lightly steamed peppers and onions, topped with fresh green peppercorns and basil, and drizzled with a reduction made from leftover broth.

Main Course
Naked Sea Bass with Vegetables
Grilled sea bass (skin on), lightly dusted with coarse sea salt. Accompanied by grilled eggplant, zucchini and yam fries rubbed with garlic and fresh herbs.

Dessert
Grilled Peaches
Served with low-fat Greek yogurt whipped with pure vanilla extract. Topped with pomegranate seeds and a drizzle of homemade raspberry compote.

Beverages
Cherry Blossom Iced Tea
High-quality, loose-leaf green tea finished with cherry blossoms and cold-steeped overnight. Finished with floating slices of orange and strawberry.

Appetizer
Fresh Bruschetta
Chopped and seeded fresh tomatoes, tossed with fresh basil chiffonade, finely chopped garlic, a splash of balsamic vinegar, a drizzle of olive oil, freshly ground black pepper and sea salt to taste. Served on grilled slices of garlic-rubbed whole grain sourdough.

Main Course
Grilled Rosemary Garlic Chicken with Quinoa Risotto
Fresh chicken breast marinated overnight in lemon juice, fresh rosemary, crushed garlic and olive oil and then grilled. Served on a bed of quinoa risotto and topped with chopped fresh spinach and low-fat feta.

Dessert
Berry Parfait
Layers of cold low-fat, plain Greek yogurt, raspberries and blueberries with a crunchy toasted walnut-oat topping, drizzled with raw honey.

Beverages
Iced Tea
Brewed tea garnished with lemon, orange and lime slices.
