Vegan Coconut Butter Chia Seed Eyeballs |
We are bombarded with sweet treats at this time of year. Why not make your own healthy versions. And since this is the last day of Clean Carb October, I've got the perfect recipe for you.
Zain Jamal was working in the kitchen yesterday whipping up Peanut Butter Chocolate Chip Back Pack Kisses from The Eat-Clean Diet Vegetarian Cookbook and a few creative changes later she wound up with Vegan Coconut Butter Chia Seed Backpack Eyeballs!
Halloween Recipe: Vegan Coconut Butter Chia Seed Backpack Eyeballs
*** Note - all measurements are exactly the same as the original recipe just using different ingredients.

2 Tbsp (30 ml) flaxseed, cracked * I used whole black chia seeds

I made CLEAN Coconut Mounds yesterday, and they were super delicious. My family loved them! The other day I made the Ooey Gooey Banana Chocolate Chip Bread Pudding from the Eat Clean Vegetarian Cookbook...SO GOOD! Happy Halloween!
ReplyDeleteMy fav is to make sure I eat a clean breakfast, it sets the tone for the day. On busy days, smoothies with protein powder are my breakfast on the go!
ReplyDeleteMy Fav super quick and easy way to overcome the craving for candy is to have a date with an almond stuffed inside. No prep - instant sweet tooth killer. Now, it doesn't have protein but it does the trick like nothing else for me. :)
ReplyDeleteI make a delicious vegan/sugar free pumpkin pie smoothie that is sweetened with a little stevia and maple syrup! You can find the recipe here: http://plantinfusions.blogspot.com/2012/10/pumpkin-pie-smoothie.html
ReplyDeleteI bring my food along with me as usual, and if I'm feeling tempted, I make some of my favourite clean treats (anything with peanut butter!). Giving into unhealthy foods makes me look and feel terrible, and they'll just take me farther from my goals!
ReplyDeleteRecipes like yours are a way I stay clean during halloween! there are so many healthy sweet treats you can make that won't even make you miss candy! i love making date balls or chocolate protein muffins. you can even make homemade healthy chocolate sauce and bites. super yum and quick and easy to grab!
ReplyDeleteI make everything with pumpkin puree, and avoid the desire to have candy!
ReplyDeleteNot to buy candy or junk and have it in the house.
ReplyDeleteI always make sure I buy candy that I don't like to give the the spooks and goblins who come to the door. AND I make sure I have a big pot of soup waiting for me when they all go home. Something savory is always a favorite reward/treat for me!
ReplyDeleteThis year I didn't buy any Hallowe'en "treats" for the trick or treaters until last night. That way I was tempted to eat anything I really don't need. Taking away the temptation really makes a difference! In previous years we'd usually have to go & buy more treats by the time tonight came around! I've also realized how badly I feel when I eat these things after eating clean for awhile now!
ReplyDeleteHalloween also happens to be my mom's birthday! We are both Eating Clean so I made her a clean chocolate cake for her birthday that we are going to enjoy tonight after work with a scary movie!
ReplyDeletePerfect thing to keep us out of the candy and chocolate!
I mix a chopped apple with some lemon juice and cinnamon, microwave until soft, and then add some walnuts--Yummy!
ReplyDeleteI made a triple batch of healthy pumpkin mini muffins with chia, coconut oil, and flax for my family and neighbors :)
ReplyDeleteI try to pretend that Halloween isn't happening. Easier to do without kids!
ReplyDeleteMy trick is to eat clean before leaving with the kids and making sure that I will not get hungry down the road by packing healthy snacks.
ReplyDeletePumpkin protein smoothies for the whole family for an after school snack and we are the family who hands out carrots!!
ReplyDelete=)
This is my first Eat Clean Halloween. My plan is to stick to the ECD principles all day and make sure everyone gets a good dinner before trick-or-treating.
ReplyDeleteTo keep it clean during the holidays.I have a lot of pumkin oatmeal :)
ReplyDeletehomemade Lora Bars...sooo easy!!
ReplyDeleteWho needs FAKE sugar when there are homemade nut butters to be had. YUUUUUUUMY!!!!

Eat healthy meals with real, clean foods. Drink water throughout the day. Bake a healthy treat to enjoy!
ReplyDeleteEat clean throughout the day and afterwards enjoy cacao covered almonds...it doesn't get sweeter and cleaner than that :-)
ReplyDeleteI always make sure to have some sweet veggies on hand like beets, red peppers, & Sweet Gherkin pickles! Who needs candy?!
ReplyDeletexoxo, Grether
