Oatmeal Pumpkin Squares

To continue on with our fall festival of pumpkins I have another recipe to share with you... gluten free Oatmeal Pumpkin Squares. The aroma will create a beautiful fall atmosphere in your home. Pair it with hot apple cider, warm socks and a great book and you will be cozy and well-nourished. Love it!

Read on for the recipe...

1 cup cooked pumpkin (you can used canned, just be sure it's unsweetened)
1/2 cup large flake oatmeal, gluten-free
2 Tbsp freshly squeezed orange juice
1 cup almond butter
¼ cup raw maple syrup
2 eggs
1 Tbsp pure vanilla extract
2 Tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp celtic sea salt

1. Preheat oven to 350 degrees Fahrenheit. Prepare an 8x8 glass baking dish with coconut oil & a sprinkle of almond flour.

2. In a food processor combine pumpkin, orange juice, oatmeal and almond butter. Pulse until well blended. Pulse in maple syrup, eggs, vanilla, cinnamon and salt.

3. Pour batter into your baking dish and bake for 32 to 36 minutes. Cool and serve with a dollop of apple or pumpkin butter.

  1. looks and sounds delicious! i was looking for a different pumpkin recipe to make so i think i'll be making these today :) thanks tosca!

  2. Is there a recipe you could recommend without Almond butter. My daughter is highly allergic but I'm sure she would enjoy a pumpkin treat.

  3. ok, so just pulled these out of the oven and true to your word the house smells heavenly!!! couldn't wait for them to cool completely though! yummy... very nice indeed... do you have the nutritional information on these?

  4. Rachel - Can your daughter eat sunbutter? I bet you could substitute that for almond butter.

  5. I forgot the Almond butter at the store any other suggestions? Do I have to have Almond butter?

  6. SumOfFood - I just calculated it.
I am guessing that the pan makes 24, so it's based on 1/24th of the recipe.

  8. thanks Becca... i would say the 8x8 pan only made 12...but either way i can calcute from there with the info you gave me... thanks so much for doing that

  9. Considering making this but without eggs. Probably don't really even need to replace them with anything. Maybe I'll put in half a banana.. Thanks!
