Oatmeal Pumpkin Squares
To continue on with our fall festival of pumpkins I have another recipe to share with you... gluten free Oatmeal Pumpkin Squares. The aroma will create a beautiful fall atmosphere in your home. Pair it with hot apple cider, warm socks and a great book and you will be cozy and well-nourished. Love it!

Ingredients
1 cup cooked pumpkin (you can used canned, just be sure it's unsweetened)
1/2 cup large flake oatmeal, gluten-free
2 Tbsp freshly squeezed orange juice
1 cup almond butter
¼ cup raw maple syrup
2 eggs
1 Tbsp pure vanilla extract
2 Tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp celtic sea salt
Methods
1. Preheat oven to 350 degrees Fahrenheit. Prepare an 8x8 glass baking dish with coconut oil & a sprinkle of almond flour.
2. In a food processor combine pumpkin, orange juice, oatmeal and almond butter. Pulse until well blended. Pulse in maple syrup, eggs, vanilla, cinnamon and salt.
3. Pour batter into your baking dish and bake for 32 to 36 minutes. Cool and serve with a dollop of apple or pumpkin butter.

ReplyDeleteIs there a recipe you could recommend without Almond butter. My daughter is highly allergic but I'm sure she would enjoy a pumpkin treat.

Rachel - Can your daughter eat sunbutter? I bet you could substitute that for almond butter.

I made these yesterday for Halloween and they were so delicious!!!! Would work well with apple sauce instead of pumpkin, I'm sure!
