Sunday Morning Moist Banana Muffins
Ingredients:
- 1 cup quick cooking oats
- 1 cup plain rice or almond milk
- 1 cup whole wheat flour
- 1/2 cup ground flax seed
- 1 teaspoon each baking powder and soda
- 1/2 teaspoon each cloves, cinnamon and allspice
- 1 teaspoon lemon zest
- pinch sea salt
- 1/2 cup pure maple syrup
- 4 egg whites beaten until foamy but not stiff
- 1 cup mashed ripe banana (about 2 large bananas)
- 2 teaspoons vanilla extract
- 1/2 cup plain yogurt
- 1 cup blueberries
- 1 large apple cut into pieces
- Preheat oven to 350 degrees F.
- Line muffin tin with parchment paper liners
- Place oats in medium prep bowl and pour milk over. Mix and let stand while you make the rest of the recipe.
- In another medium prep bowl combine flour, ground flax seed, spices, baking powder and soda, lemon zest and salt. Mix well until all ingredients are evenly distributed. Set aside.
- Put egg whites in mixing bowl and beat until fluffy but not stiff.
- In small prep bowl mash bananas and add chopped apple. Mix well.
- In large prep bowl combine flour, soaked oats, egg whites and banana mixture. Add blueberries. Fold until all ingredients are just blended.
- Spoon into prepared muffin tin.
- Bake in preheated oven for 15 to 20 minutes or until golden brown on top.

Just skimming the recipe, I see all I need to buy is ww flour and maple syrup! I agree with Sarah--thank you for the recipes, and the story along with it is great! I LOVE the close-up pic of your adorable pup with snow all over her nose!! Also found some inspiration with Sarah's success. I'm about to go on a hike myself! Have a great Sunday :)
ReplyDeleteThis recipe sounds great I need to make some adjustments - do you have any recommendations- I am lactose intolerant- will need substitute for yogurt in recipe, and also unable to do any dairy milk substitutes- no rice, soy, oat ect. What about orange juice would that work???

ReplyDeleteThanks for sharing....I have all your books and try new recipes each week! I am disappointed with my attempt at these muffins. I followed all the steps and at the end realized I missed where to add the yogurt, vanilla and maple syrup. I added them at the end, forgot the maple syrup somehow and ended up with a very moist and bland muffin:=( I assume the ingredients I missed should have been added with the banana and apple? Looking forward to trying it again! I want snow shoes now too, thanks!
ReplyDeleteI made these today and they were delicious! I only substituted Egg Beaters for the eggs, because I was out of eggs. I also added a few chopped walnuts on top. Thanks for sharing, I will be making these a lot!

ReplyDeleteRecipe forgets to tell you when to add yogurt, vanilla and maple syrup. Also - mine made more than 20 using regular sized muffin cups.
