Jenny's Vegetarian Chili

Today's Eat-Clean Diet Vegetarian Cookbook guest blogger is Jenny Owens. She is here to share her incredible 100-pound weight loss story with us. What a treat it is to have her here today. She is also sharing her Vegetarian Chili recipe, too. Thanks Jenny. 
My Eat-Clean journey started 2½ years ago.  I weighed 240 pounds and I had extremely high blood pressure.  I never felt good and I had very low self esteem.  When I had to go for a stress test because of my high blood pressure, I knew I had to make a change.  I discovered Tosca’s Eat-Clean Diet Recharged and it changed my life forever.  When  I received the book in the mail, I read the whole thing in one day.  I could not put it down. I started Eating Clean and using her books as my second bible.  I lost 100 pounds and had never felt better.

I joined the YMCA, which was a very hard move for me.  I weighed 240 pounds and was very self conscious.  I am so glad I did.  I became addicted to exercising especially kickboxing. My favorite workout right now is the deck of cards workout. You don’t need any equipment, just your own body weight. You assign each suit a body area. The number you draw is how many reps you do. It is awesome.  It takes about an hour and a half to do but it is so effective.  You work everything.

About 6 months ago, I made the choice to go vegetarian.  I am so happy I did.  I have never felt better in my life. I don’t really miss meat at all.  I love to make chili and the meatless kind is the best ever - check out my recipe below.  I use soy-based meatless protein. It tastes better than meat. I have noticed a difference in my energy levels and the way my skin and hair have changed.

In my opinion, a plant-based diet is the only way to go.  If it comes from the ground, you are good to go.  I don’t really eat any processed food.

Vegetarian Chili

Ingredients

One package of Yves meatless soy protein
3 medium onions, chopped
3 bell peppers, chopped
Generous amount of hot peppers(Jalapeno and cayenne)
1 cup vegetable broth
1 can kidney beans
1 can black beans
1 can homemade tomato sauce (sugar-free)
3 Tbsp chili powder
1 Tbsp fennel seed
2 tsp sesame seeds
1 tbsp oregano

Methods
1. Spray a pot with olive oil & warm over medium heat.
2. Cook onions until soft.
3. Add meatless protein, peppers, vegetable broth, tomato sauce, beans and spices.
4. Bring to a boil. Reduce heat to a simmer for 25 minutes.
5. Enjoy!
