Kasey's Dark Chocolate Powercakes & Strawberry Chia Jam!

Today's Eat-Clean Diet Vegetarian Cookbook guest-blogger is Kasey Arena. She has a delicious chocolate powercakes recipe to share with us, complete with chia jam. My favorite! You've got to try it out. Enjoy!

Hi there! My name is Kasey Arena & I blog about healthy eating & fitness tips! I share my stories about how I combine my passion for cooking, baking, & Eating Clean foods with my passion for fitness.  After dealing with food allergies for most of my life, Eating Clean has truly been the answer. I actually had the pleasure of meeting Tosca at the Arnold Sports Festival this year. She has always been such an inspiration of mine when it comes to Eating Clean! I am so thankful for the chance to share with you one of my favorite (vegetarian friendly) powercake recipes!
Dark Chocolate Powercakes with Strawberry Chia Jam
Dark Chocolate Powercakes with Strawberry Chia Jam 

POWERCAKES INGREDIENTS
Dry Ingredients 
1/2 cup ground rolled oats (grind oats in a food processor or sub 2 Tbsp of flour)
1 Tbsp ground flax seed
2 Tbsp dark cocoa powder
1/2 tsp baking powder
1 tsp cinnamon
1 tsp pure vanilla extract
Wet Ingredients 
4 egg whites
1 whole egg
1/2 cup unsweetened coconut milk (or liquid of choice)
1/2 cup pure pumpkin puree
10 drops liquid stevia (you can replace this with 1 Tbsp of any type of natural sweetener)  

POWERCAKES METHODS
1. Mix all ingredients.
2. Heat 1 Tbsp of coconut oil on a medium-heat griddle.
3. Cook a few minutes on each side until done.

CHIA JAM INGREDIENTS
1 cup of frozen strawberries
 1/4 cup water
 2 Tbsp chia seeds
10 drops liquid stevia (you can replace this with 1 Tbsp of any type of natural sweetener)

CHIA JAM METHODS
1. Microwave strawberries with water in a microwave-safe bowl.
2. Once heated, mix in chia seeds & liquid stevia.
3. Let sit in the refrigerator to cool & gel for at least an hour (I like to let mine sit over night).
4. Top the Powercakes with the Strawberry Chia Jam.

  1. Looks delicious! When you say 1/2 can of pumpkin, do you mean a large can or a small can? I once made pumpkin muffins with a large can when the recipe called for a small can; you can imagine how those turned out...

    Kasey, can we have the link to your blog? I'd love to read more about you competition experience and get more recipes! It's a goal of mine to compete one day. :)
